Potatoes are one of my favorite foods. They are incredibly versatile, full of essential vitamins and minerals, a healthy plant-source of carbohydrate and fiber, and crisp up beautifully in the oven. I wanted to share with you my full proof potato preparation method for the perfectly crispy yet healthy wedges!
I cook my potatoes at 425F (approximately 220C) for 35-40 minutes. The key however is: boiling your potatoes FIRST! I wash and cut them into my desired wedge shape, then place them in a pot of water, bring to a boil, and then let them cook until a fork pokes through easily.
Once you've drained the potatoes, toss them in olive oil (optional!) and your favorite seasonings. Some of mine include: greek mix (lemon peel, oregano, marjoram, basil), smoked paprika, curry powder, and nutritional yeast. The options are truly endless!
After tossing in oil and your spices of choice, place the wedges on parchment paper on a baking sheet. Space them out evenly so there's an even cook. Bake in the oven for 35-40 minutes or until your desired crispiness is achieved. Remove, and let cool slightly, then dip in your favorite sauce! I love ketchup, vegan garlic aioli, or a drizzle of vegan sriracha mayo.
